Hamburger Buns

Jordan, this is for you. And me, in case I lose the little paper it's on, because of course I didn't write it on a recipe card. How logical that would be!

Mix:
1 c + 3T warm water
1 T yeast

in a bowl. Let sit while you grind your wheat-- about 3 c. berries

Add:
1/3 c olive oil
2 T honey
1 egg

and mix.

Add:

1 c whole wheat flour
2 t salt

and mix again.

Then add enough flour so that sides of bowl are clean (about 3 1/2- 4 1/2 c total, depending on lots of things, including, but not only, weather, whether your hands are clean, if your A/C is going, and what blood type you are)

Knead 5 minutes by machine or about 2 hours by hand.

Roll to about 1 inch thick on an oiled surface. Use glass or round cookie cutter to cut circles. Place on oiled sheet and cover. Let rise about 10 minutes while heating oven up to 425. Bake 8-10 minutes. Makes about 10.
